Season the Salmon with salt and pepper. In a baking pan, add the fennel, celery, onion, garlic, mint. Pour the broth over the vegetables. Bake in 450 degree oven for 30 minutes, cover with foil. Remove from oven, carefully remove the foil. Place Salmon on top of the vegetables. Pour lemon juice on Salmon, pour the Sambuca onto the Salmon. Cover in foil. Bake in 450 degree oven for 8 minutes. Remove from oven; remove foil, place cheese on top of Salmon. Put back in oven uncovered to melt the cheese. Carefully plate up the Salmon, add the braised vegetables, and pour some of the remaining jus on top.
