Parmesan crusted beef strip loin

Have your butcher trim the fat off the striploin, but leave a small layer of fat on.Pre-heat oven to 375 degrees.  The parmesan will create a nice golden brown crust on top of the beef.  Place loin in a roasting pan, and first season with pepper, press the pepper firmly in. Put all of the cheese on top of the beef. No salt is needed as the parmesan is salty already. Cook for 30-40 minutes until it reaches as medium-rare temperature of 130 degree, or cooked to desired temp. Remove beef from pan, and let rest on a cutting board for 10 minutes. Slice beef thinly and serve with a prepared horseradish sauce.
