In a large saute pan heat some olive oil, use caution. Sear chicken till it has a brown crust. Mix all ingrediants, except cheese in a bowl, add remaining olive oil. Pre-heat oven to 375 degrees. Marinate chicken in bowl. Place chicken in a roasting pan. Evenly distribute marinade.Cover with foil. Cook for 60 minutes. Remove from oven, remove foil. Turn oven up to broil, add cheese on top chicken. Place chicken under broiler, until cheese melts, and is brown. Be careful not to burn cheese.
